The 2018 edition of barrel fermented Grande Réserve has acquired plenty of nuances during its additional fermentation and maturing in oak barrels and former whisky barrels.

Brewed within the walls of Scourmont Abbey in southern Belgium, Chimay is an Authentic Trappist Product, meaning it is produced under the supervision of the monks who live and work at the abbey. For over a century, the monks have overseen both the brewing of Chimay’s beers and the production of their renowned cheeses, with the vast majority of profits dedicated to charitable causes and community development.

The monks of Scourmont Abbey belong to the Order of Cistercians of the Strict Observance, commonly known as Trappists. Following the Rule of Saint Benedict — a monastic tradition dating back to the 6th century — these monks sustain their community through manual labor while dedicating their lives to prayer and service.
In 1850, a small group of monks settled on the rugged plateau of Scourmont near Chimay, Belgium. Through years of hard work, they transformed the barren land into fertile farmland and built a monastery rooted in simplicity and self-sufficiency. Around the abbey grew a small agricultural community, followed by the development of a cheese dairy and eventually a brewery — laying the foundation for what would become one of the most revered Trappist breweries in the world.
