About Schneider Weisse

Schneider Weisse stands as Bavaria’s oldest wheat beer brewery — a pioneer of the Weissebier style and a brand defined by its singular focus on mastery, tradition, and innovation within one category.

Since acquiring the royal rights to brew wheat beer from King Ludwig II in 1872, Schneider Weisse has remained dedicated to perfecting the art of Weissebier. Rather than diversifying across styles, the brewery has embraced wheat beer as a lifelong pursuit — continuously refining its portfolio while honoring the depth and complexity the style can offer.

In a modern beer landscape driven by constant experimentation, Schneider Weisse takes a different approach: doing one thing exceptionally well. Its range of wheat beers showcases remarkable precision and consistency, with each expression highlighting the nuanced interplay of yeast, malt, and fermentation.

Traditional brewing methods remain central to this philosophy. From open fermentation and the careful skimming of krausen, to secondary fermentation in the bottle, every step is designed to preserve character and authenticity. Combined with locally sourced Bavarian ingredients, the result is a portfolio of beers that are both technically refined and deeply expressive — setting the global standard for the style.

The History

Founded in the late 19th century, Schneider Weisse has played a pivotal role in preserving wheat beer brewing at a time when the style was in decline. By securing the exclusive rights to brew Weissebier, the brewery ensured the survival and continued evolution of a uniquely Bavarian tradition.

Today, Schneider Weisse remains family-owned and operated, with each generation building upon the legacy of those before it. This continuity has allowed the brewery to balance heritage and progress — maintaining time-honored techniques while continuing to push the boundaries of what wheat beer can be.
