1.) Preheat oven to 400 degrees F and line a baking tray with foil. Place bacon slices on tray ensuring they do not overlap. Bake for approximately 15 minutes or until bacon is golden brown and crisp. Remove and drain on a paper towel lined tray.

2.) Meanwhile, in a large cast iron or heavy bottomed skillet, heat butter over medium-high heat. Just when butter begins to melt, add mushrooms to pan and sear for 5 minutes or until golden brown. Flip and sear on on other side till golden. Season with salt and pepper. In the same pan sear onions for 2-3 minutes or until translucent.

3.) For the burger and onions: divide meat into 4 equal portions and form loosely into thick burgers. Season generously with salt and pepper. Heat skillet to high and sear burgers on one side until golden brown and slightly charred. Flip and sear the other side for 3-5 minutes, or until desired doneness. In the last 2 minutes of cooking, top burger with Chimay cheese and cover loosely with foil to melt. 

Serve by assembling burgers on buns, topped with mushrooms, onion, bacon…and more cheese, if desired!
