PAIRING CHIMAY BEER AND CHEESE

It is an amazing achievement to have your brewery produce beers that are universally regarded as some of the best in the world. It is even more impressive to achieve that while simultaneously running a dairy. Not many breweries can boast that claim.

Thanks to the monks of The Scourmont Abbey a beer and cheese line were cultivated in synchrony over the course of a century. This provides beer and cheese lovers alike an opportunity to enjoy the perfect pairings.

Along with our friends at Atalanta and Chimay we rolled up our sleeves and tasted all the beers and cheese together to determine our favorite pairings. Below are our suggestions, but don’t take our word for it. Cut, Sip, Repeat and let us know what pairings you enjoy most!

CHIMAY CINQ CENTS (White) with LE GRANDE CLASSIQUE
The first cheese ever developed by Chimay, Classique is washed and aged for 4 weeks. It is mellow, offering some subtle grassy notes with a touch of salt and a buttery finish. Cinq Cents gives a bright yeasty finish, while the pale malts turn up the perception of grassy notes making this an easy pairing.

CHIMAY PREMIÈRE (Red) with A LA CHIMAY PREMIÈRE
This pungent cheese is the most unique of the Chimay line. The wheels are washed in Chimay Première and aged for 4 weeks. Hop extract is added to the paste of the cheese providing pronounced floral and herbal flavors and a slightly bitter finish. A La Première was created for a pairing experience as apricot notes will be mirrored from your knife to your glass.

CHIMAY GRAND RÉSERVE (Blue) with GRAND CHIMAY
A luxurious cheese that was created to accentuate the high quality of milk produced in the Chimay region. Rich in taste, this cheese takes on an almost meaty quality. Salty and floral notes are balanced perfectly by a silky mouthfeel that blends beautifully with the rounded caramel notes of Chimay Grande Réserve Ale.
